Ingredients:

  • 1 large (about 1 1/2 pounds) eggplant
  • 2 tablespoon(s) olive oil

  • Lemon wedges

Directions:

  1.  Cut eggplant into 1/2-inch-thick slices; brush each slice with olive oil.
  2. Place on hot, ridged grill pan over medium-high heat; cook eggplant slices 4 to 6 minutes per side or until tender. Transfer to platter.
  3. Sprinkle with feta cheese, mint, and a drizzle of fresh lemon juice. Garnish with lemon wedges.
