This is one of those recipes that’s so ridiculously easy to make, so delicious, and so healthy, that you’ll wonder why you shouldn’t make it at least once a week. A recipe couldn’t get much easier than this with only two ingredients.

Cooking the mushrooms on the grill couldn’t be easier. Cooking time will depend on how hot your grill is, but 10-15 minutes is about how long it takes. It is preferable to have the mushrooms still a little firm, but well browned, which is best done with high heat.



(2-3 servings)

  • 1 pound large mushrooms
  • 1/4 cup Italian salad dressing, not low fat or fat free.


  1. Despite all the cookbooks saying not to wash mushrooms, I’ve done it for years. Either wash mushrooms by rinsing with cold water and then drying with paper towels, my method, or wipe clean. Cut in thick slices, about 1/2 inch wide. Put in large ziploc bag or plastic container with snap-on lid and pour dressing in. If you have time, marinate for an hour or two, although it’s not essential.
  2. To cook, preheat grill to medium high with the grill pan sitting on the grill while it heats. Drain dressing from mushrooms and pour them into grill pan. (The dressing will flame up a little; I squirt it out with a spray bottle if it flames too much.) Cook 10-15 minutes, turning occasionally, or until well browned but still a little bit firm. Serve hot.
